Mozzarella is a soft pure white cheese, traditionally from southern Italy. It has a soft and stringy texture with a very thin rind and delicate taste. When cut, it produces a white watery fluid with the aroma of milk enzymes.
Mozzarella has excellent melting qualities and is suitable for all sort of dishes. It comes with all different shapes and forms, each one with his particular taste and texture variations.
The classic fiordilatte has a round form of different sizes. Twisted strings of mozzarella forms a 'treccia', whereas a knot of mozzarella would be called 'nodino'. And a thin layer of mozzarella thick would be a 'sfoglia' or sheet of mozzarella.
In 2013 Il Casaro has won the Silver Medal for the Langham Champion Fresh Unripened Cheese with "Mozzarella Fiordilatte".
